- 1/2 tsp garam masala powder
- 1/2 tsp amchur powder
- 1/2 tsp coriander powder or crushed coriander seeds
- to taste Salt
- 2 tsp oil
- 2 tbsp finely chopped coriander leaves
- Oil for deep frying
Instructions to make to make Samosa
- Take all the ingredients of making dough except water in a big mixing bowl and rub thoroughly.
- You will notice that the mixture will turn crumbly. Now start adding water in small quantities and knead hard dough. Cover it with wet cloth and keep it aside for 10-15 minutes.
- Heat 2 tsp oil in a pan on low medium flame.
Add jeera and saunf. - Now add green chillies and grated ginger, saute for few seconds.
- Add heeng, turmeric powder, red chilli and coriander powder, saute for few seconds.
- Add boiled and mashed potato, amchur powder and salt. Mix well and cook for 2-3 minutes.
- Lastly add chopped coriander leaves. Mix well and keep aside.
- Knead the dough again for 2-3 minutes.
Divide the dough in equal lime sized 8 portions. Make small balls. - Roll each ball in oval shape. Cut it horizontally into two equal portions.
- Pick up one half and apply water on all the sides and make cone.
- Stuff it with aloo masala and seal it gently so that it sticks properly. Make all the samosas like so.
- Heat oil in a kadhai on low medium flame. Oil should not be too hot, else samosas will cook from outside but remain uncook from inside.
- Deep fry the samosas on low medium flame till crisp and golden brown.
- Drain the samosas and serve hot with a cup of hot ginger tea and enjoy😊
